  Spicy Lentil Meat Loaf
An old favorite with added fiber.
   

• Preheat oven to 180ºC (350ºF).
• In a skillet, brown ground beef. Drain off excess fat.
• In a 3 L (3-quart) casserole, combine beef, lentils, sweet pepper, water, ketchup, soup mix, mustard and vinegar.
• Bake 30 minutes. Garnish with parsley. * servings

Ingredients
454 g   lean ground beef 1 lb
1 L   cooked Nona's Instant Lentejas 4 cups
175 mL   chopped sweet red pepper 3/4 cup
250 mL   water 1 cup
125 mL   ketchup* 1/2 cup
45 g pkg.   French onion soup mix* 11/2 oz
5 mL   prepared mustard* 1 tsp
5 mL   white vinegar 1 tsp
    sprigs of fresh parsley
